In one of the videos at CBT you mention that IPv6 allows multiple address on a single interface. How does this work and why would you want to do this.

To assign multiple addresses – you just keep inputting ipv6 address ….. (Cisco command shown). This could have a ton of purposes. Two that immediately come to mind – you are migrating from one space to another so you have both on there during the transition. Another would be addresses for different purposes. For example, you have an address there for Unicast purposes – then you assign another address for Anycast purposes.
